Duck Noodles with Star Anise Broth (serves 2)

1 large duck breast or two small.
1 tsp Five Spice
2 dried Noodle Nests
Fresh Chilli and Coriander to finish
200g Baby corn and Mange tout. 

For the Broth

15g chopped Ginger
15g minced Garlic
1 fresh red chilli, finely chopped
900ml chicken stock
1 tbsp Soy Sauce (or to taste)
1/2 tbsp cornflour
1 tsp Chinese Five Spice powder
1 Star Anise

Method.

add the chopped garlic chilli and ginger to a large sauce pan and stirfry with a little oil on a medium heat until soft and fragrant

Add the five spice, star anise and corn flour and stir. Gradually add the chicken stock, stirring as you do, then bring to the boil. Add soy to taste - and more chilli if you want. We like it spicy 🌶️ 

Reduce the heat, pop on a lid and keep at a gentle simmer while you start the duck.

Dry the skin of the duck and season the skin with a little salt and the five spice powder. Rub it in well. 
Add to the duck skin side down to a cold frying pan and turn on the heat press down on the top of the duck so that the skin is fully in contact with the heat for at least 15 seconds. Cook on a medium high heat for five minutes or until the skin is golden and crispy turn the duck over and cook for a further 2 - 4 minutes depending on the size remove from the pan and leave to rest. (If you don’t want it pink increase the cooking time) 

While the duck is resting as the noodles to the pan with the broth in and after two minutes, add the veg simmer gently until just cooked through about five minutes then serve in white bowls with the duck on top

Finish with fresh chilli and coriander.

Honey Roast Ham. 

The only way to kick off a new year. So easy to make. 

Boil your gammon (it’s not a ham until it’s cooked!) for 20 mins per .5 kgs in a large pan with a lid. Mine was 1.75 kgs and I did it for 70 mins.  I added a chopped onion, a chopped Carrot, 3 bay leaves and a handful of peppercorns for flavour. (The broth can make a lovely base after for stock or soup.)

Once boiled, remove the ham and cool a little. Take off the skin and most of the fat with a sharp knife, score what’s left in a diamond pattern. 

Mix 2 tbsp honey with 2 tbsp Dijon or English Mustard and rub into the ham fat.  Roast in a preheated oven at 180 degrees for 20-30 mins. (Keep an eye on it, it  will burn quickly!) Rest for 20 mins before serving. 

Delicious Hot or Cold. Can’t wait for the leftovers …
